VINIFICATION
Grapes were harvested at optimum ripeness levels and vinified separately. The different varietals were matured separately in a combination of 3rd and 4th fill French-and American oak barrels for 12 months after which it was carefully blended (it took a couple of weeks to determine the perfect balance between the different identities of the different varietals!), stabilized and bottled.

FOOD PAIRING
All red meats work well with the Diemersfontein Summer’s Lease, but it has a special affinity towards piquant game dishes and succulent lamb roasts.
